This recipe is in perfect time for 4th of July. After seeing a number of these frozen yogurt barks on TikTok, I decide to make a version for our lectin-free community.

Let’s talk fruit…

If you follow Dr Gundry or any of his protocols, you know, we try to reduce sugar intake from all sources, even fruit. Dr Gundry even goes as far to say, “We should give fruit the boot and on the rare occasions when we do eat fruit, it should only be eaten in season.”

Fruit contain sugars known as fructose. Fructose is sugar. That’s the bottom line. For this reason, most fruits (except avocado, lemon, and limes) are not staples in our house.

Follow these three rules for picking fruit…

  1. Choose fruits with lower sugar content like berries.

  2. Choose fruits from the YES List, only when they are in season in your area. (Click here for the yes list)

  3. Choose organic fruits. These fruits are grown in natural conditions, without pesticides or chemical additives.

Frozen Yogurt Bark!


INGREDIENTS

Everything you need to make frozen yogurt bark like, yogurt, blueberries, strawberries, parchment paper, knife, scissors, knife, and cutting board.

Here’s the goodies you’ll need to make Frozen Yogurt Bark.

  • assortment of fruit from the approved yes list

  • unsweetened compliant yogurt (dairy-free options are available too)

SUPPLIES

  • baking sheet (small enough to fit in the freezer)

  • parchment paper or silicone baking mats

  • cutting board

  • knife

INSTRUCTIONS

Here’s how to make Frozen Yogurt Bark at home.

  1. On a cutting board, carefully cut fruit into thin slices.
    PRO TIP: To reduce sugar content, cut all fruits (even small fruits like blueberries in half)

  2. Line baking sheet with parchment paper or silicone mats.

  3. Spoon a thin layer of yogurt onto prepared baking sheet

  4. Add fruit to the layer of yogurt.

  5. Place baking sheet in freezer for 1 hour and 30 minutes.
    (May take longer to freeze, depending on the thickness of the yogurt layer.)

  6. Remove the parchment paper or silicone mat from the frozen yogurt.

  7. Break the Frozen Yogurt Bark into pieces with your hands or transfer to a cutting board and cut into pieces.

  8. Serve immediately and enjoy before it melts.
