Rainbow Popsicles are going to be a hit this summer! You don’t want to miss out on serving these to your family and friends. These are not your usual, ice cream truck Rainbow Popsicles loaded with artificial colors, flavors, and sugar/corn syrup. This recipe is a healthier option that uses natural colors and sugar-free ingredients.

Let’s talk about artificial color…

Dyes and artificial coloring should never be in our food. Did you know that most unnatural dyes have contaminants that are known to cause cancer? Some well-known carcinogens like Benzidine, 4-aminobiphenyl and 4-aminoazobenzene can be found in artificial dyes.

It’s ok, play with your food!

On this pastel edition, I used less than 1/4 tsp for each color. Play with the colors until you find a shade you like.

3 natural food powders we used to achieve ALL the colors in our Rainbow Popsicles.

  • RED - Beetroot powder is used to make the red color and has a slightly earthy flavor. You don’t need much powder (maximum 1 tsp) to get a beautiful red color without adding flavor. Other ideas to get red color is to use Vital Reds from Gundry MD. (Vital Reds taste like red Kool-aid)

  • BLUE - Blue Spirulina is a gorgeous cobalt blue that comes from blue algae. The color is so strong that you only need 1/2 tsp or less. Blue Spirulina is flavorless making it the perfect addition for a vibrant blue. Other ideas for blue is try wild berry flavored Power Blues from Gundry MD.

  • YELLOW - Turmeric is golden yellow in color and has a STRONG earthy flavor. In this recipe, I used 1 tsp of turmeric which gave a beautiful color but it was entirely too strong in flavor when we taste tested. I recommend using only 1/2 tsp. Other ideas for a yellow color is Essential Orange by Gundry MD which tastes like orange sunrise.

Rainbow Popsicles

  • Silicone Popsicles molds (10)

  • Wooden Popsicle sticks

  • High Powered Blender

  • Glass Measuring Cup

  • Extra large bowl

  • 3 bowls

  • whisk

  • Baster (optional)

INGREDIENTS

Here’s all the goodies you need to make 10 full sized Rainbow Popsicles.

  • 4 1/2 c water

  • 1 1/3 c allulose

  • 2 tsp vanilla extract (sugar-free)

  • 1 tsp beetroot powder

  • 1 tsp turmeric

  • 1/2 tsp blue spirulina

  • 1 1/2 tsp xanthan gum (makes it less ice)


INSTRUCTIONS

Here’s how to make Rainbow Popsicles at home.

  1. Mix the water, allulose, and vanilla extract until dissolved in a large bowl.

  2. Divide the clear mixture equally into three bowls.

  3. Sift the beetroot powder, blue spirulina, and Tumeric into each bowl using a fine-mesh strainer. Use a hand whisk to blend liquid.

  4. Using one bowl of color at a time, transfer the color liquid into a high-powered blender and add 1/2 tsp xanthan gum. Blend until the color becomes creamy and slightly thickened, and transfer back to the original bowl. Continue this step for the other two bowls of color. Wash the blender between each color.

  5. Before adding your first layer of color to the popsicle mold, visually note how much space each layer of color will need. Divide the by the number of colors you plan on making. These rainbow popsicles will use six colors (from bottom to top): red, Orange, Yellow, Green, Blue, and Purple. PRO TIP: Use a chalk marker to mark the outside of the popsicle mold where each layer should stop.

  6. Read the next section for detailed instructions on how to make each color. (Using these popsicle molds, each layer used about 3/4 of a cup of color, except the first layer utilizes a little less.)


Let’s Create a Rainbow…

Red- Using a small glass measuring cup with a pour spout, gather 1/2 cup- 3/4 cup of red liquid from the bowl and pour it into the popsicle molds. (NOTE: The tip of the popsicle molds is the thinnest, so this layer will take less liquid than the other colors.) Pour the remaining red from the measuring cup back into the red bowl to save to create the different colors. Place popsicle molds into the freezer for 1 hour and 30 minutes. Prepare the next color.

Orange- Orange is made of red and yellow. In the glass measuring cup, mix the red and yellow until orange is formed. Only make about 3/4 cup of orange. Save the remaining colors to be mixed. Remove popsicle molds from the freezer and add the orange layer. Return popsicle molds to the freezer for an additional 1 hour and 30 minutes before adding the next layer. Clean the glass measuring cup.

Yellow- Fill the glass measuring cup with 3/4 cup of yellow liquid from the bowl. Pour the yellow color into the popsicle molds. Place the lid on the popsicle molds and add the wooden sticks. Push the sticks down until the frozen layer can be felt. Place popsicle molds into the freezer for 2 hours. Pour the remaining yellow color from the measuring cup back into the yellow bowl to mix with other colors later. Prepare the next color.

Green- Green is made of blue and yellow. In the glass measuring cup, mix the blue and yellow until the green is formed. Only make about 3/4 cup of green. After mixing green, disregard the yellow. Save the remaining blue to be used later. Remove the popsicle mold from the freezer and gently lift the lid while holding each stick in place until the entire cover is removed and the sticks remain in place. Add the green layer and return popsicle molds to the freezer for an additional 1 hour and 30 minutes before adding the next layer. Clean the glass measuring cup.

Blue- Pour 3/4 cup of blue liquid from the bowl into the glass measuring cup. Remove the popsicle mold from the freezer and pour the blue layer into the popsicle mold. Pour the remaining blue from the measuring cup back into the blue bowl to mix the following colors. Place popsicle molds into the freezer for 1 hour and 30 minutes. Prepare the next color.

Purple- Purple is made of red and blue. In the glass measuring cup, mix the red and blue until the purple is formed. For a vibrant purple, use more red than blue. Remove popsicle molds from the freezer, add the purple layer and return popsicle molds to the freezer for an additional 3-4 hours or entirely frozen.
