This meatball recipe makes about 30 meatballs. That’s way too many for my family of three to eat at one time.  I like to cook the portion that I will use for my meal that evening and freeze the rest uncooked. Freezing meatballs for later does two incredible things for our family. (See the storage notes on best ideas on how to freeze!)

  • #1-Portion Control. Everyone knows if there is more, it will get eaten. Or is that only in my house? Besides portion control, I like to do it this way because it also helps us monitor our animal protein consumption. It’s easy to over consume if it is cooked and ready.

  • #2 Makes my life easier. Who doesn’t want that? If I need a quick meal, I run to the freezer and take out some frozen meatballs and frozen marinara sauce. Make a box of Jovial cassava pasta noodles and we have a simple spaghetti and meatballs night that I feel good about giving to me family.

  • #3 Make as much or as little as you want. Ok, I know I said 2 incredible things for our family but this one is for my single peeps, struggling to find meals that don’t feed a soccer team. You can pre-make these and then make a smaller portion catered to you!

LectinFree Meatballs

These ingredients are enough to create 30 meatballs. Preparation takes 10 minutes, cooking takes up to 30 minutes, and delicious lectin-free meatballs are ready in just 40 minutes.

INGREDIENTS

Here’s all the goodies you need to make Lectin-Free Meatballs.

  • 1 lb ground grass fed/finished beef

  • ¼ c white sweet potatoes mashed- you can use any type of sweet potato

  • ¾ c LFW breadcrumbs -use lectin-free breadcrumbs. Find the recipe/tips on how to get lectin-free breadcrumbs here.

  • 2 eggs

  • Fresh cracked pepper

  • 2 tsp minced garlic

  • ¼ c parsley, finely chopped

  • ½ onion, chopped finely

  • 2 tbls coconut aminos

  • 1 tbls Worcestershire sauce

INSTRUCTIONS

Here’s how to make Lectin-Free Meatballs at home.

  1. Preheat oven to 350°

  2. Line baking sheet with parchment paper

  3. Mix all ingredients together with a fork

  4. With a 1-inch ice cream scoop, scoop the meat mixture onto the parchment paper until there is no more mixture in the bowl

  5. Use your hands to roll the scoops of meat into balls and return to the parchment paper (be sure they are not touching)

  6. Bake the meatballs for 30 min and serve

Storage…

The trick to freezing uncooked meatballs is to put on a baking sheet lined with parchment paper, make sure the meatballs are not touching one another before you put them into the freezer. Once they are frozen you can put them into freezer zipper bags so they are ready the next time you want a quick meal. The day before you are ready to use, simply remove from freezer and thaw overnight in fridge. Set your oven to 350° and bake for 30 min.
