  • Dr. Gundry suggests no more than one ounce of cheese a day, so don't go overboard and eat the whole pan yourself. It’s hard, I know!

  • You can substitute the cheeses for what you have in your area but be sure to make sure they come from compliant milk sources. This was the first version of Mac-n-Cheese Cauliflower that I created. I want to revisit this recipe now that I’ve learned a lot more about cheesy flavor without cheese.

  • Consider putting it under the broiler for 1 minute after it is done cooking for a caramelized cheesiness on top. 

  • Another fun twist on this dish would be to add some crushed pork rinds as a topping for the last 5 minutes of baking.

In a short amount of time, you can make a nutritious and tasty mac and cheese cauliflower. This amount of ingredients will create 4 cups.

INGREDIENTS

Here’s the goodies you need to make Mac-N-Cheese Cauliflower

  • One cauliflower head- cut into bite-size pieces

  • 1 tbsp melted ghee

  • 0.5 oz parmesan

  • 1.5 oz goat cheese cheddar

  • 1.5 oz goat cheese gouda 

INSTRUCTIONS

Here’s how to make Mac-N-Cheese Cauliflower at home

1.     Preheat oven 375 °C

2.     Grease a small glass baking dish (big enough to hold the head of the cauliflower after it’s been diced)

3.     Boil cauliflower for 5 min

4.     While cauliflower is cooking-In a separate bowl-add 1oz goat cheese cheddar, 1 oz goat cheese gouda

5.     Drain the cauliflower in a colander

6.     Add the drained cauliflower to bowl with cheese mixture and stir until combined.

7.     Transfer mixture to pre-greased baking dish

8.     Top with remaining cheeses

9.     Bake for 20-25 minutes at 375 °C
