The cabbage steaks and Broccoflower become quite soft after being baked and absorb the tastes of the spices put on them before cooking. The outside leaves have slight crispiness to them, which balances nicely with the soft interior. 

One of the best things about this vegan cabbage steak recipe is that it uses ingredients that you likely already have on hand.  If you aren’t a vegan, this recipe is still a fantastic way to incorporate a vegetables into your dinner or a great idea for Meatless Mondays. After you've prepared the ingredients, which only takes a few minutes, you can put them in the oven to roast while you prepare other meals. These vegan steaks are simple to prepare, which is just what you need on a busy day.

Ya’ll know, I love sauces. Another way to add an extra kick of flavor is to replace the balsamic vinegar with coconut aminos and fresh grated ginger. So it’s the same-same but different.

INGREDIENTS

Here’s all the goodies you will need to make your own vegan cabbage steak dinner

·       Broccoflower (see vegetable prep instruction)

·       Purple cabbage (see vegetable prep instruction)

·       3 tablespoons of olive oil

·       1 tsp minced garlic

·       Salt 

·       Pepper

·       Balsamic vinegar drizzle

·       Microgreens (optional)

 How thick should I cut the cabbage steaks?
When I go to make cabbage steaks, I like to cut the cabbage about a minimum of 1/2 inch -3/4 inch thick. Leaning towards thicker cuts will help the cabbage steaks to maintain their shape, instead of falling apart. Don’t be too hard on yourself, if the slices aren’t perfect, I always have some uneven slices. The ones that are too flimsy and the top piece, I usually shred those pieces and save them in the fridge for a later date, for another delicious cabbage meal like coleslaw or add them into a salad blend.

Which way should you cut the cabbage?
I always cut the cabbage from top to bottom, meaning if the cabbage was growing out of the ground, I would cut off the top from left to right and work my way down to the stem in horizontal cuts.  I shared this recipe with a friend and she had a bit of a difficult time understanding my description of how to cut it so maybe this will help better.

What’s Broccoflower?
Broccoflower is a beautiful chartreuse green vegetable from the cruciferous family. You may have seen it hanging out next to the cauliflower and broccoli in the supermarket. It’s flavor is a cross between a cauliflower and a broccoli. Some species can have a beautiful psychedelic texture, making it look like it comes from another world. While these bright colored veggies look like they aren’t natural, you can feel safe knowing they are not genetically engineered.

How should I cut Broccoflower?
I like the pieces on the larger side (because they shrink when you cook them) so I try to cut off big pieces and slice them in half so the flat side can lay flat on the baking sheet.

They don’t carry Broccoflower in these parts, what can I substitute?
Never fear, a regular head of cauliflower or broccoli can takes the Broccoflower’s place.

Is Vegan Cabbage Steak healthy?
Vegetables are important sources of a variety of essential nutrients. The cabbage and Broccoflower are rich in B6 and folate, are high in fiber, and boasts some powerful antioxidants. Additionally, it's packed with Vitamin C & B group vitamins. All of the nutrients are known to help keep inflammation in check, improve digestion, lower blood pressure, and lower cholesterol levels.

INSTRUCTIONS

Here is how to make your own Vegan Cabbage Steak Dinner!

1.     Preheat the oven at 425° F

2.     For easy clean up-line a baking sheet with parchment paper. You can skip this step and spray the baking sheet with compliant oil. Be sure not to use too much oil otherwise the cabbage will be come soggy.

3.     In a separate bowl- mix the olive oil and garlic

4.     Add the Broccoflower and coat in the olive oil mixture.

5.     Transfer the Broccoflower to the prepared baking sheet, cut side down

6.     Using the same bowl with the leftover oil mixture coat the cabbage steak with remaining oil (You can add more oil and garlic if needed)

7.     Transfer cabbage steaks to the same baking sheet

8.     Generously sprinkle Broccoflower and cabbage steaks with salt and pepper

9.     Drizzle balsamic lightly over cabbage steak

10.  Bake for 10 min and then flip Broccoflower and cabbage steaks over and bake for additional 10 more minutes 

11.  Remove from oven and allow to slightly cool before stacking the Broccoflower on the cabbage steak and garnish with micro-greens.

Pro Tips…

  • Choose fresh veggies. Make sure that the cabbage and Broccoflower you buy for this dish are fresh and crisp. Look for cabbage that is compact and well packed, with few free leaves, and that is heavy for its size.

  • Don't skip the oil. This step is crucial because the oil not only helps the vegan steak become tender but also helps the spices stick and not burn throughout the baking process.

  • Season both sides. Remember to turn the cabbage and Broccoflower and oil and season them again. You obtain a more uniform distribution of tastes and texture by using these components on both sides.

Notes:

If you prefer more of a grilled/charred flavor you can cook for 15 minutes on each side instead of the suggested 10 minutes. (The meal in the picture above was done for 15 minutes each side)
