Leek & Cauliflower Soup

 

Leek & Cauliflower Soup is wonderfully creamy but it uses no dairy. This soup is so delicious and easy- You’ll be craving it all year long..

This Leek and Cauliflower soup is a spin off of a famous winder soup- Leek & Potato Soup. It actually tastes very similar. I think if you did a blind taste test you’d not be able to taste the difference between the two but let me tell you why this Leek & Cauliflower Soup is better than the original version.

Potatoes are full of starchy carbohydrates with very little protein- this means they have a high glycemic load. Potatoes= Weight Gain

Cauliflower on the other hand contains fiber promoting weight loss. Yay for healthy!

What’s a Leek?

A leek is a vegetable from the Allium family. Other Allium family members include onions, garlic, shallot, scallion, chive, and Chinese onion. Leeks have a sweet onion flavor and are the perfect accompaniment for soups, pasta dishes, and hearty dishes.

If you’ve never cooked with a leek don’t be intimidated! Funny story, I remember the first time I cooked a leek, it was in a recipe by Ina Garten. I was frozen in fear, standing in my kitchen holding a life sized version of a vegetable that was surely used as a prop on “Honey, I Shrunk the Kids.” Now that I’ve dated myself with a 80’s movie reference, I guess it’s time to move on to how to use an actual leek.

How to clean and cut a leek.

Below is a quick picture guide on how to clean and cut a leek. Most recipes will only ask for the white part of the leek. The white part of the leek is tender, the texture is similar to very thin layers of onion. The dark green top is not often used because it is thicker and not as easily digested as the white part of the leek. The dark green top is used in dishes like stocks/broths where the flavor can be extracted.

 

Leek & Cauliflower Soup

INGREDIENTS

Here’ all the goodies you need to make Leek & Cauliflower Soup.

  • 2 leeks- cleaned and diced

  • 1 medium/large white onion- diced

  • 1 orange cauliflower- chopped into pieces. Disregard the stem. (Any color cauliflower will work. I like using the orange because I think it slightly tricks the mind into thinking the flavor is cheesy.)

  • 2 tbsp ghee (The BEST ghee, dare I say in the WORLD) or avocado oil

  • 3 cloves of garlic- minced

  • 3 cups broth or stock (preferably homemade)

  • 1 tsp of fresh thyme leaves (or MORE)

  • 1 tsp iodized sea salt

  • 1/2 tsp pepper

  • 1 lemon zest/juice

INSTRUCTIONS

Here’ how to make Leek & Cauliflower Soup at home.

  1. Turn Instant Pot to sauté mode, melt ghee

  2. Add onions and leeks- sauté for 4 minutes, stir occasionally

  3. Add garlic, sauté for 1 minute

  4. Add stalk or broth, cauliflower, thyme, salt, and pepper. Stir to combine and rotate bottom to top

  5. Turn off sauté mode. Replace the lid. Change setting to pressure cook for 5 minutes on high

  6. Carefully, manually release steam and allow to depressurize

  7. Remove the lid, add the lemon zest and lemon juice

  8. Use immersion blender to puree

  9. Garnish with fresh thyme
