Lectin Free Green Curry Paste

 

This Lectin Free Green Curry Paste is flavorful with a gentle heat, adding a nice level of spice to any dish. We all love a good curry paste but after becoming lectin-free, I learned that store bought curry pastes were filled with toxic preservatives, harsh oils, artificial dyes, and worst of all, yep you guessed it— lectins.

What’s a curry loving girl do? I’ll tell you what we are going to do. We are going to make our own Lectin Free Green Curry Paste. If making your own curry paste sounds intimidating, never fear, this was extremely easy to throw together. After making fresh curry paste for the first time, I was a bit disappointed I hadn’t tried making it sooner since it is super freaking easy.

Before we get any further this is a Phase 3 recipe. The reason for this is because of the jalapeño peppers. While the jalapeño peppers are skinned and deseeded, peppers should only be reintroduced in Phase 3.

The ingredients listed are enough to make 1 cup Green Curry Paste. This recipe can be ready in only a few quick minutes.

KITCHEN TOOLS

Here’s the kitchen tools you need to make Lectin Free Green Curry Paste.

  • Mini Food Processor -You’ll need a food processor to make this in a snap. A regular sized food processor will work but I prefer this smaller version because the clean up is so much easier than a larger food processor.

  • Vegetable Peeler - A good vegetable peeler is an essential kitchen tool. What I like about this one is the no slip handle. It’s very comfortable grip if you are going to be using a vegetable peeler frequently.

  • Disposable Gloves - Having disposable gloves on hand is always a good idea, especially if you wear contact lenses. (Haha- “gloves on hand” occasionally I’m accidentally funny!) Using disposable gloves will stop the spicy oils from transfering to your skin when you are cutting and peeling peppers.

  • Cutting Boards- These Epicurean Cutting Boards are my absolute favorite. They are light weight and very thin. These Epicurean cutting boards store very nicely in tight spaces.   • 2 jalapeño (peeled and deseeded)

  • 2 inch piece of fresh ginger (peeled & corsely chopped)

  • 5 cloves garlic (peeled)

  • 1 tsp corriander seeds

  • 1 tsp cumin seeds

  • 1 tsp black pepper

  • 1 tsp iodized sea salt

  • 1 celery stock (diced corsely)

  • 1/2 tsp ground tumeric

  • 1/4 white onion

  • 1 lime zest

  • 1 lime juice (2 tbsp)

  • 3 tbsp avocado oil

  1. Put all of the ingredients into a food processor and pulse until paste is formed. Yep, it’s that simple. Now you can use it all immediately or store it for next time. Check out the storage section where I tell you storage options.
