French toast sticks have a rich buttery flavor and sweet cinnamon & sugar-free coating. French toast sticks are a great way to satisfy a sweet breakfast desire. French toast is a popular breakfast of every family so, I think your family will love these delicious French Toast Sticks.

The crunchy and tasty French toast sticks are the perfect way to start your day! They're simple to make and put together in no time. Even better, they can be made ahead of time so you can enjoy them with minimum effort on a hectic weekday morning.

Before you can make these yummy breakfast bites, you’ll need to start off with a high quality loaf of lectin-free & gluten-free bread like Best Sandwich Bread.

A quick roll in a cinnamon-sugar mixture adds the final touch. Top with sugar-free caramel syrup, seasonal fresh berries, or coconut whipped cream.

INGREDIENTS

Here’s the goodies you’ll need to make French Toast Sticks

·      5-6 slices of extra thickly cut lectin-free bread like Best Sandwich Bread

·      1 cup unsweetened almond milk

·      3 pastured eggs

·      1 tsp vanilla extract

·      1 tsp maple extract

·      1/4 tsp nutmeg

·      1/4 tsp cinnamon 

·      1/2 tsp iodized sea salt

·      4 tbsp melted butter*

INSTRUCTIONS

Here’s how to make French Toast Sticks at home.

1.     Preheat oven to 350° F

2.     Line a baking sheet with parchment paper

3.     Cut each piece of bread into three slices creating the sticks

4.     In a medium mixing bowl- whisk to combine the almond milk, eggs, extract(s), nutmeg, cinnamon, salt, and 1 tbsp of melted butter.  Pour mixture into a shallow dish

5.     One at a time, dip the breadsticks into the mixture in the shallow dish, coat all sides, and place on a prepared baking sheet. (Allowing the excess mixture to drip back into bowl before placing onto the baking sheet)

6.     Bake for 10 minutes, remove the pan from the oven and flip the sticks. Return pan to oven for additional 10-15 minutes. Meanwhile, make cinnamon and sugar-free topping

7.     Using a pastry brush, brush the remaining 3 tbsp of melted butter onto the cinnamon toast sticks and sprinkle with cinnamon and sugar-free topping

Ingredients

For The Toast
  • 5-6 slices of extra thick lectin-free bread
  • 1 c unsweetened coconut milk
  • 3 pastured eggs
  • 1 tsp vanilla extract
  • 1 tsp maple extract
  • 1/4 tsp nutmeg
  • 1/4 tsp cinnamon 
  • 1/2 tsp iodized sea salt
  • 4 tbsp melted butter*
For The Cinnamon & Sugar-free Topping
  • 3 tbls monkfruit sweetener 
  • 1 tbsp cinnamon
  • 1/4 tsp nutmeg
  • 1/8 tsp iodized sea salt

Instructions

For The Cinnamon & Sugar-free Topping
  1. In a small bowl combine the monk fruit sweetener, cinnamon, nutmeg, and salt. Adjust ratios to taste
  2. Pour topping into a small shaker jar or use your fingers to sprinkle mixture onto cooked sticks

Notes:

*butter- use compliant butter

**These can be frozen on a baking sheet and moved to zipper bag when frozen. To reheat microwave for one minute, flip and microwave for additional minute.
