Breadcrumbs & Croutons are easy to make when you start with the perfect lectin-free bread. The very first thing I missed when I went lectin-free was bread. Never, did I imagine how many non-bread foods actually had bread in them by way of breadcrumbs.

Making Breadcrumbs is a building block for several recipes on Lectin Free Wife like Lectin-free Meatballs & Coconut Shrimp. Croutons make every salad delicious but are especially delicious on my Caesar Salad or make a whole pan for Thanksgiving stuffing.

What kind of bread should I use?
✓ You can use any kind of lectin free bread. My favorite bread to use for making Breadcrumbs & Croutons is Best Sandwich Bread (recipe coming soon) There is no preservatives the Best Sandwich Bread recipe so, it is best to eat in the first couple days. Whatever bread doesn’t get eaten in the “fresh window”, gets turned into breadcrumbs and stored in the freezer until I need to use them.

Do I have to use seasoning?
✓ You don’t have to use seasoning at all and you can change up the seasoning combination if you prefer flavored breadcrumbs.

How much time will it cook for?
✓ Lectin-free breads take a little longer to firm up that regular gluten bread. I think this is because of the added moisture but just keep an eye on it as it bakes.

INGREDIENTS

Here’s all the goodies you need to make Croutons or Breadcrumbs.

  • 5-6 pieces of bread

  • Italian blend seasoning

  • garlic powder

  • iodized sea salt

INSTRUCTIONS

Here’s how to make Croutons or Breadcrumbs at home.

For Croutons

  1. Preheat oven to 375° F

  2. Line baking sheet with parchment paper

  3. Cut in cubes bread into preferred crouton size. Try to cut similar size so cooking time is even

  4. Place bread cubes on prepared baking sheet and season with seasonings and salt

  5. Bake for 20-35 minutes until golden and crispy. Check after first 20 minutes to see if they are ready. If not, the return to the oven for remaining time- checking every 5 minutes. Cooking times will vary depending on moisture in bread

For Breadcrumbs

  1. Follow instructions for croutons. Remove from oven and allow to cool

  2. Pour cooled croutons into a zipper bag. Use a rolling pin to roll over the zipper bag until breadcrumbs are created

Storage…

  • Store breadcrumbs or croutons in an air tight container in the freezer for up to 6 months.
